Tokaji Szamorodni Sec reflects the enormous potential of great dry wines aged under a veil of yeast. This may be the Grand Sec of Tokaj, which was known and loved for centuries in Poland and Northern Europe. It is undoubtedly the only dry wine in the world made from botrytised grapes. Once fermentation is complete, it is aged under a veil of yeast, which protects it and contributes to its wide range of flavors. This perilous ageing process, lasting three to six years, allows the wine to acquire characteristic tertiary aromas, similar to those of Spanish sherry or Jura yellow wine.
